Glazed Pumpkin Cookies

These are, hands down, a new family favorite. Lots of great pumpkin and spice flavor and super easy to make. The girls and I whipped up a batch to throw in the oven in about 5 minutes! Honestly, I dare you to eat just one. 🙂

Glazed Pumpkin Cookies

Ingredients

Cookies:

  • 2 1/3 cups all purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cloves
  • 1/2 tsp salt
  • 1/2 cup butter, softened
  • 1 cup white sugar
  • 1 cup canned pumpkin puree
  • 1 egg
  • 1 tsp vanilla extract

Glaze:

  • 2 cups confectioners sugar
  •  3-4 Tbsp milk
  • 1 tsp vanilla extract

Directions

  1. Preheat oven to 350 degrees F. In a large bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, ground cloves, and salt.
  2. In a medium bowl, cream together the 1/2 cup of butter and white sugar. Add pumpkin, egg, and 1 teaspoon vanilla to butter mixture, and beat until creamy. Mix in dry ingredients. Drop on cookie sheet by tablespoonfuls.
  3. Bake for 15 to 20 minutes in the preheated oven. Remove and allow to cool.
  4. To Make Glaze: Combine confectioners’ sugar, milk, and 1 teaspoon vanilla. Add milk as needed, to achieve desired consistency. Drizzle over cookies. If glaze is running off cookies, put them in the fridge for a few minutes to firm up glaze.
